Packed with 12 grams of protein each, these no-bake protein bars are not only a treat for your taste buds but also a breeze to prepare. Ideal for meal prepping, they’re the perfect snack to keep you energized throughout the week.

Ingredients:

  • ¼ cup plant-based vanilla protein powder (I prefer Truvani)

  • 1 cup oat flour

  • ¼ teaspoon salt 

  • ½ cup creamy natural peanut butter (or almond butter)

  • ¼ cup honey (or maple syrup)

  • 1 tablespoon melted coconut oil (plus more if needed)

  • 1 teaspoon vanilla extract

  • 2-4 tablespoons chocolate chips (plus extra for topping)

Instructions:

  1. Prepare the Pan: Line a loaf pan with parchment paper and set aside.

  2. Mix Dry Ingredients: In a mixing bowl, combine the plant-based vanilla protein powder, oat flour, and salt.

  3. Combine Ingredients: Add the creamy natural peanut butter, honey, vanilla extract, and melted coconut oil to the dry mixture. The dough will be quite thick, so I recommend mixing with your hands. If the mixture is too dry, gradually add more melted coconut oil or water, one teaspoon at a time.

  4. Add Chocolate Chips: Fold in the chocolate chips with your hands or a spoon.

  5. Press and Top: Press the dough evenly into the prepared loaf pan. Sprinkle additional chocolate chips on top and gently press them in.

  6. Chill: Refrigerate the bars for at least one hour to set.

  7. Serve: Remove from the fridge, cut into 6 equal-sized bars, and enjoy. These bars will stay fresh for about one week in the fridge or up to 3 months in the freezer.
